Chilled Beet Soup

I have modified this soup from a recipe I got from a blender book. Canned beets are great for this recipe. You can save the juice from the canned beats, freeze it and add it in place of the chilled water or ice. Try serving with a dollop of sour cream.

Step: 1

Place sour cream, lemon juice, onion and beets into a food processor or blender and puree until mixture is smooth.

Step: 2

Add ice or cold water, chill and serve with a dollop of sour cream on top.

The name of “stew” can refer to 2 time a dish and a cooking method. Stewing involves not fast cooking piece of meat, vegetables or beans in a flavorful liquid . Stew has a perception for being a rib-sticking eating process that warms you up on a cold , winter day. It’s true ; a bowl of classic beef stew can make warming properties , but stew’s cozy factor goes way beyond preserving you from the cold . It’s all about those soft and chunks of food and vegetables, swimming in a thick, ultra-rich gravy. The more they come together make the greatest comfort food, no matter the weather.
